Day 16 at the Kushi Institute

Today it must be 80 degrees outside and it is very hot in the kitchen.  We go from snow to sweltering, but I do love the heat.  Today at lunch we had corn tortillas, pinto beans, a corn, celery, and arame salad, with a carrot and turnip salsa.  It was really tasty and you didn't even think about having the meat, cheese, and sour cream like we used to have at home on taco night.  Everybody enjoyed them even people who are only here for a weekend class and macrobiotics is all new to them.  I am halfway done.  I leave in 14 days from today.  part of me is sad that I have already hit my halfway point and another part of me misses my husband and son and can't wait to get home.  I think I am getting a little cabin fever because I haven't left the Kushi Institute since I have been here.  I didn't bring a car so I am always here.  I guess on a beuatiful day like today it would have been great to get out and go for a long hike, but this was one of my long days in the kitchen so it will have to wait.

  1. Michelle, I've enjoyed reading about your adventures and all that you're learning! It sounds like you're learning a lot and gaining so much from this experience. I'll be excited to hear more when you get back!
